It’s the simple dishes, especially in hot weather, that really call to me. Super sweet summer tomatoes, fresh fragrant basil, and spaghetti are cooked in one pot for an easy 20 minute dinner. One pot pastas aren’t anything new, but it took me a while to jump on the bandwagon. Now that I’m there though I’m not getting off – they’re the perfect dish to make when those gorgeous sun-drenched evenings are calling you outside and you don’t want to be standing at the stove too long. I added some hand-torn chunks of burrata on top as a extra treat. The creaminess of my all-time-favorite cheese with the classic combination of tomato and basil was just too alluring to resist!

One Pan Pasta: Tomato, Basil and Burrata Spaghetti slightly adapted from Martha Stewart
serves 4-6
prep time: 10 minutes
cook time: 10 minutes
total time: 20 minutes
- 12 ounces spaghetti
- 4 small tomatoes, quartered
- 4 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes
- 2 tablespoons extra virgin olive oil
- 4 cups water, plus 1/2 cup if needed
- coarse salt and freshly ground pepper
- fresh burrata, to finish
- fresh basil, to finish
Combine the pasta, tomatoes, garlic, red pepper flakes, oil and water in a large heavy bottomed pan or pot (large enough to fit the pasta in without breaking).
Bring to a boil over high heat. Boil, stirring and flipping pasta with tongs until pasta is al dente and cooked through and water as nearly evaporated, about 8-9 minutes. Season to taste with salt and freshly ground pepper. Enjoy hot with fresh burrata, basil, and a tiny drizzle of olive oil, if desired.
*If your pasta is too dry without it cooking all the way through, add in the extra 1/2 cup of water during the cooking time.

Really well done (like deliciously done not overcooked to death well done) pasta + tomato sauce + some cheese can be the BEST dish. Every time I’ve been to Scarpetta I always give myself a mental pep talk that I will NOT order the $24 dollar spaghetti pomodoro and EVERY TIME. Urghhh. But so good though.

really good summer tomatoes, basil, and fresh mozzarella/burata is one of the best combos ever. when i’m too lazy to even boil pasta, i’ll toast a hunk of bread, or even ignore the carbs and go for a caprese salad.
Where do you buy burrata? I have been to a few different grocery stores, and I never seem to find it (I live in Ontario). Do you go to a specialty store? I want to know, because this looks so delicious and I can’t wait to try it!
they have it at whole foods, do you guys have one? and italian places tend to have it too! i hope you can source it out because it is dreamy :)

I stumbled upon this blog about an hour ago and have not left it! Every recipe looks amazing and I will definitely leave more comment as I make some of them. I came across another post of yours where you use a zoodles ( a soup). Do you think we could sub zoodles in for the pasta in some of your other pasta recipes, particularly this one?
hi roshni! you can definitely sub zoodles, but you won’t need to use all that water to cook them zoodles cook almost instantly when you sauté them, so just sauté quickly with some tomatoes and garlic and top with the cheese and basil. hope that helps!
I made this and was surprised that it was quite good. I would make this again. It took a little longer than usual for the pasta to cook but worth the wait. Thanks for a new way to think about pasta.

I haven’t liked one-pot pasta recipes in the past, so I was skeptical about trying this recipe. However I’m so glad I made it because it turned out AMAZING. I added a couple extra cloves of garlic but that was the only change I made. All of my friends commented what a creamy texture the pasta had. Not only was it delicious but it was also so easy and fast to make.

We have made this 3 times and it never disappoints. I use Barilla Protein Spaghetti and it is absolutely perfect and has protein.
